Was there a particular brand name you were looking at? For California you need a VOC compliant stain. Here is a few examples of products that would work well for you in your state:

TWP 500 Series Wood Deck Stain
Armstrong Clark Wood Stain
DEFY Stain for Cedar

I really like the 500 series on cedar shake, but I have not tried the others.

I have recently used the 200 series which is made for cedar shake roofs and it works very well, allthough it would not run through the 12 volt pump as it was too thick, we ended up using the tank sprayer.

Are cedar roofs a safe bet for water logging? What if cedar roof becomes wet and rot affected?

Cedar it naturally resistant to rot and decay. If you do get some rotting shingles then you will need to replace them.
